Recently I was treated to a trip to Alaska on a cruise ship with 10 family members. Before you flinch thinking of spending that much time with family in close quarters I want to mention that actually our family is AWESOME and we had a great time checking out the Alaska Glaciers. This part of our family gets along great. Okay…enough bragging. Now that you know this you’ll see why my biggest concern was food.
Yeah there is a ton of food on a cruise ship and it’s available 24/7… but not with listed ingredients and I do think much of it has a lot of “unnatural” fillers. Before heading out I called Celebrity and told them about my diet and concerns. They told me that many people have a variety of diets and just to talk to customer service as soon as I got on the boat and they would walk me though all the food and help me find what I could eat. WOW! Talk about service.
I didn’t do this check in right away, but our first night in the dining hall our server came and asked for me by name. I was shocked to find out that just by calling to inquire they had sent that information on and my server already knew about my dietary concerns! She quickly appeared with Gluten Free bread for me to chomp on before I ordered my steak dinner. I did however gain some weight back…oh well it was still super NICE!
On the cruise there were times that my tummy wasn’t happy but usually that was when I cheated or just ate something without asking if it was FODMAP friendly. So yes, it is controllable and fairly easy to do even on a cruise ship. I was able to enjoy the trip fully no stress! YAY!

The other night I was at home and desperately digging through my fridge wanting to avoid a trip to the store (some days I am anti-market). Being FODMAPPY I was a little stressed since my usual meals were gone… so I looked around and created this simple FODMAP friendly dish with leftovers. Not only was it delicious, my husband liked it so much he asked for it to be put into rotation!
FODMAP Friendly Chicken Fried Rice
- 1/2 Cup of cooked chicken (I also made this with Cubed ham)
- 1 Cup of cooked Rice (I used white, but brown would be good too)
- 1/2 C Green beans cleaned and cut into thirds
- 1/4 C of shredded carrot
- 1/4 C Chopped Spinich (or basil I’ve done both)
- 1/4 cup of coarsely chopped red pepper
- 1T sesame Oil
- 1/4 C Gluten Free Tamari or Soy Sauce (or to taste)
- 2 Eggs (beaten)
- 1 tsp Water
- 1 chopped Jalapeno (optional)
- Heat the Sesame oil in a frying pan
- Once hot, add the veggies (carrots, green beans, pepper, Spinich, jalapeno) Saute for 2-4 minutes until peppers are slightly soft
- Add chicken and Rice (add a splash of water to rice if it’s day old rice and is a bit dry) . Mix all the ingredients together well.
- Pour in the Tamari and mix well, rice should turn a little brown. Taste as you add it, different people like different salt levels
- Push the rice/veggie mixture to the side so you have a part of the pan open to pour in the beaten eggs with the tsp of water. Scramble it off to the side
- Once the eggs are scrambled mix them into the rest of the mixture well.
- Voila, you have some FODMAP friendly Fried rice! It’s pretty yummy!

Enjoying the Wedding Weekend!
Imagine this…so there you sit with your partner, at the wedding rehearsal for your lovely sister-in-law and you suddenly realize, crap I’m on this newish to me (the low FODMAP diet) and I don’t’ want to blow it, but there will be limited food options all weekend. Have you been there or something like it? Yeah I just did this over the weekend ..and on thing I HATE is feeling like the pain the butt so I kinda panicked. Don’t get me wrong most of my family is very supportive, but I have changed diets so many times and really…I remember planning my wedding and there were so many things to worry about that remembering peoples dietary issues was not on my radar other than making sure there was vegetarian food.
So back to this weekend… there we were, at a gorgeous yard right on the Puget Sound, the sunshine keeping us warm as we laughed and chatted. One would think that as the appetizers came around it would have dawned on me that I would have to deal with dinner and my diet. Nope, I had my glass of wine and was happily chatting with family declining the tasty treats. Then we were seated and my gorgeous dressed salad with fig, blue cheese and bacon arrived. It looked amazing, and like a HUGE NO NO… I stared at my pretty salad for a moment as if I could ask it, can you just be something I can eat please. It stared back as if to say, Um…No lady figure it out. I sighed…then excused myself and headed into the kitchen. I thought if I discretely spoke to the catering staff they could help me out. I did meet some resistance from the proud chef, but in the end we worked out a meal for me eliminating my large and random seeming FODMAP list. Phew. I drifted back to the table and pawned my tasty looking figs off on my happy to receive them hubby. Sounds like the end of the story until….
One of the hosts was worried, seeing me chat so long with the catering staff she asked what happened. I had to fess up that I had dietary issues so I had to be careful with my food. I hoped it would end there but it started a discussion. I think it is a good thing that people are interested in allergies and FODMAP diet (or any diet) but somehow I find this terribly embarrassing when I just want to enjoy and fall into the fold. But this is my lesson, I need to speak up for myself and get the food I need to stay healthy and able to enjoy this kind of time with my family. And I did it and had a great time at the awesome wedding. Phew…

Who knew I’d ever get to say this and sound like an action hero, but I can…KILL PHASE COMPLETE! Yes, with my SIBO I’m all done with the antibiotics and the kill off the problematic bacteria and move on to the re-build phase where there will be all kinds of resorts and condos in my but for the happy healthy bacteria, or so this is the plan. But how does it get there? Fermented Foods is one of the many ways.
Super, you may say, that sounds great, why post about it? This is why…FODMAP has a no cabbage deal going. And while I plan to ferment my own food I need to learn how to do this (Any tips from food fermenters welcome!) the problem with the store bought stuff is Cabbage is in EVERYTHING! So I had hoped that maybe the chemicals changed and maybe I could get back into Sauerkraut but from what I have seen that is no dice. So what is a girl to do? Enter Firefly!
OH MYGOODNESS! NUMMERS!
With the help of my awesome Doctor Laura Eastman, I found Firefly Kitchens wonderful concoction of Carrots! So if you are looking for live fermented foods that will make your tastebuds sing, try the Firefly food… it’s seriously that good and one of them is FODMAP friendly. Thank you Firefly!!!

One of the many foods I have missed are my creamy delicious dinner. My mother made the best Beef Stroganoff. In fact I used to request that for my birthday dinner…in June. My mother refused since it was “off season” so I had to always come up with a second option or wait until it was cold out.
Turkey Stroganoff, I know it may look a bit…interesting but IT’S SO GOOD!
Now I can do whatever I want, but her recipe takes hours and has all kinds of gluten and Dairy… since I’m watching what I eat for both health and Gluten/Dairy issues this is something I skipped until I ran across a food blogger that was new to me…Skinnyms.com. I don’t know about you but I’m always hesitant with new recipe sites since some are…um..well… uh…how to put it delicately? Ah forget delicate, some have “healthy” recipes that resemble cardboard more than meals. Horrible…but I gave Skinnyms.com a shot and WOW… she wasn’t kidding. This is great. I made a few modifications to her recipe since it had dairy in it and I always have to tinker…but wow.. it’s super super good! Check this out:
Ground Turkey Stroganoff
- 1 pound ground lean turkey
- 1 diced onion
- 4 ounces sliced mushrooms
- 1 cup fat free chicken broth
- 1/2 C tomato sauce
- 1 Tablespoon balsamic vinegar
- 1/2 teaspoon black pepper (or more to taste)
- 1 tsp onion powder
- 1 tsp garlic salt
- Seasoning Salt to taste
- 1 cup dairy free sour cream (or she used plain greek yogert)
- 2 tablespoons cornstarch
Put tomato sauce, chicken broth, salt, pepper, onion powder, balsamic and garlic salt into a crockpot and stir up. Turn crockpot on low.
Spray a large skillet with nonstick spray and cook ground turkey until it loses its pink color, drain off any fat and add to the slow cooker. Spray pan again with your nonstick spray sauté mushrooms and onions with a sprinkling of Seasoning salt over medium-low heat until tender.
Add mushroom/onion mixture to the slow cooker the remaining. Cover and cook on low 7-8 hours. Combine Greek yogurt with cornstarch, add to Stroganoff and continue cooking 30 minutes. Serve over gluten free pasta, white or brown rice.
Serving size 1 cup of sauce. 6 Points per cup. Rice or pasta is extra points.

“Is there a relationship between Gluten Intolerance and dental issues?” is a questions I found myself wandering around asking anyone and everyone when my jaw went into fits of pain.
Last August (2011) I had a simple crown put on a tooth that had just gotten a new filling that was very large. Well being a redhead, I had trouble getting numb, and so I ended up with three injections of Novocaine in two different flavors…or types. Ever since then I had horrible pain in my teeth and jaw. When I say horrible pain, I’m not sure that covers it. It felt like one of two, sometimes both things. Either someone was trying to rip my jaw off my face, or they were pulling my teeth out slowly with pliers moving from tooth to tooth without warning Oh and don’t forget a jaw joint that felt like I spent the last decade chewing a whole pack of hubba bubba..sore. Not pleasant, and no one could help. Not my dentist who gave me a night guard that didn’t help, Not our holistic doctor who gave me weird h
erbs that tasted bad and did NOTHING to stop the pain, not then endodontist who thought two root canals MAY reduce the pain a little, not my regular doctor… nothing. Then I got a cold, and oddly enough a combination of Advil and sudafed not only dulled the pain but cut it almost entirely. HUH? My oral surgeon took that hint and diagnosed me with Nuropathy and set me up with a plan to “untrain” the nerves from over reacting like a silent movie star.
Yeah, that was scarey because the pain was so intense…. and because often there is no resolution or cure. After about 8 months of taking Advil, Sudafed and an anti-depressant trying to retrain my nerves to let up I saw a change, a big one…finally. I also during this time did a fair amount of research and found many articles (like a few I mention below) that link gluten intolerance and ignoring it to teeth, gums and jaw issues.
It was pretty hellish but I’m almost off of all the meds and my nerves have learned to relax. I promised my teeth/jaw no more trips to the Dentist that didn’t believe I was hard to get numb… and they agreed to stop sending a gazillion gladiators to battle on each and every little nerve ending.
For me it was un-training the nerves, but since I had been gluten cheating a lot, I think getting that on track helped a lot. And if you read stories online you can find a lot of peopel that SWEAR about a link. So if you have gluten issues and tooth pain, consider looking into it… but if that doesn’t work don’t give up keep asking doctors and other medical people…keep reading. I’m making my way out of the woods leaving the nasty fighters behind!

I can’t even begin to imagine my life without my friends. Not only because of all the great times, laughs and support they provide, but in their endless help is invaluable. My diet still embarrasses me often, in my thinking that I am an annoying “problem” but my friends have assured me time and time again that no, it’s not a problem, it’s a delightful challenge.
Last night one even said something to the effect of “You know it’s awesome when I find something that you haven’t heard of that you can eat it’s like Oh Yeah” visualize this being said with a nice celebratory arm pump decorated with a huge gorgeous grin! This made me smile.
And why were we talking about this as we munched on corn chips in a tofutti sour cream/salsa mix (aka Secret Sauce), followed by an awesome chicken and rice recipe? Because there was a new discovery for dessert for me! Oh yes, Almond Milk ice cream topped with brandied peaches (home made of course). I was beside myself with joy. Only a few short months ago I was introduced (by the arm pumper) to Coconut Milk Ice cream which is a delight, but another option with different flavors. ROCK ON! Just in time for Summer!
So delicious is seriously SO DELICIOUS!
So what is my point, aside from the fact that ice cream made from Coconut or Almond milk is yummy and that good friends are awesome? Well, it’s that maybe the only person you’re a true problem child to is yourself? And if anyone else gets annoyed, ignore them… they’re mean 😉 Seriously, who wants their friends to be sick? Those Meanie bah neenie sucka fools. That’s who…and who needs them! 😉 So thanks ladies, last night was a much needed good reminder for me…
